Happy Ukrainian Christmas

Happy Ukrainian Christmas!!! Today is the day that the Ukrainian culture celebrates Christmas and a lovely day for my mother in law and our grandma. So I thought I would share with you my the recipe for my husbands favourite Ukrainian cookie! It is a lovely cookie covered in snowy icing sugar mimicking the snowy hills and fields outside and bringing them into our warm homes and tables... beware however, these are NOT low fat and taste REALLY great. It's easy to eat a ton of them.

Ukrainian Khrustyky

Servings: 18 servings

INGREDIENTS

2 eggs
3 egg yolks
1 tablespoon whipping cream
1 tablespoon vanilla extract
2 tablespoons granulated sugar
1 1/2 cups all-purpose flour
1/2 teaspoon salt
Oil for deep-fat frying
Confectioners' sugar

INSTRUCTIONS

In a mixing bowl, beat the eggs, egg yolks, cream and vanilla extract. Beat in sugar.

Combine flour and salt; stir into the egg mixture just until smooth (dough will be soft). Divided into four portions.

You may put in the refrigerator for 1/2 hour to firm up more for easier rolling.

On a well-floured surface, roll out one portion to 1/8-inch thickness. Cut into 1 1/2-inch strips; cut strips diagonally into three pieces. Cut a 1 1/2-inch slit lengthwise into the center of each piece; pull one end of strip through slit to make a loop. Cover shaped pieces while rolling out and cutting the remaining dough.

In an electric skillet or deep-fat fryer, heat 2-3 inches of oil to 375 degrees F. Fry pastries, a few at a time, until golden brown, turning once. Drain on paper towels. Dust with confectioners' sugar while warm.

Yield: 1 1/2 dozen pastries

  1. These look very much like a pastry my Italian grandmother always made called wands. One of my favorites. I see that you are Ukrainian, do you make the beautiful eggs? I learned many years ago to make them, they are one of my most favorite crafts.

  2. I only made the eggs once and it was glorious as I recall. Actually I am not Ukrainian but my husband is half and so we celebrate with his mother and grandmother. They have wonderful food and I love to cook and eat...hahaha. May I just add a note here Joanne to say how lovely I think you bears are. Thanks for writing and please do keep in touch! I have a little sick Pug on my lap now so I have to do todays blog entry and spend some time with him. Have a lovely evening or day whenever you ready this.
